Comfort Food with History

I have recently become a fan of making home made fries, which are tastier and far healthier than the kind that you buy from the frozen section of Kroger, or that come in grease soaked cartons at McDonalds. I found a recipe for making English style potato "chips", which are made using only potatoes and oil. Here is the link.  All this being said, I think it's time to add another "this is what I will do with my life."
I will start my own fish and chips stand in Manchester, only it will be completely gluten free!! The secret will be making beer batter with gluten free flour, then deep frying the fish. It will be served wrapped in newspaper and covered with red wine vinegar and salt, along with the steaming hot chips.
